I stumbled onto your site while surfing the net.
Please, please do your research in regards to outback travel within Australia!!
I suggest a visit to some of the 4×4, caravaning or camping websites that can be found that are all Australian based.

All the best with your trip and I hope Andrew gets his carpentry visa in a timely fashion. We need all the tradies we can get down here!!

Hi there when you get here give me a call i can give you advise on most remote travel here and what is required in the most remote part of australia.

You can run by your plans for travel here and route and i can give you some feed back on best course of action. I have traveled most of remote Australia with my wife and two daughter with a camper in tow so most.
You have a few question with regards to equipement to carry.

Your comms seem a bit short. You need a good UHF radio i can recommend a good model if required. Just mobile phones is inadequate and so is just sat phone, you will need a good HF radio as well. you can always get some one in the world on it.
Your exaust jack is a great option and good advice.
The high lift jack is a must as it has so many uses and i can explain the multiude of things this item can do beside lift the vehicle.
You need a long handle shovel.
For the winch i would use a turfer 16t winch due to it versitility and easy of use.
You need to have a set of tyre pliers and repair kit and understand how to use it.
I not sure which tyres you are using but i can recommned the 2 best brands and models for the type of travel you are doing.

Your engel fridge can have a extension top on it which is good to keep the vegtables in at as the need to be a slight higher temp than the meat. you will also need a engel transit bag for your engel, this will help keep it like new but more importantly it will add a considerable amount of extra insulation that you will definetly need here and all of tropical asia.
I would also recomend you car has snorkel with a sy-clone prefilter, this filter was on of the best things i bought , as it payed for it self in 20000klms off road and thru 4 deserts.
What are your fuel and water capacities?
    What spares are you carrying?
    What are your mechanical abilities?
